This week, let's start with cooking.

An Andhra delicacy : Stuffed Brinjal [Menthi Vankaya Koora]

The words "stuffed brinjal" does not really say a lot about this very common and delicious curry. But the words "Menthi Vankaya" is more specific. Menthi means Methi seeds and Vankaya means brinjal in Telugu. This curry is very common with traditional Andhraites. This dish is prepared using  the small (purple colored) brinjals.
Ingredients

8 small fresh tender brinjals.

5 - 6 tbsp oil
Salt to tasteFor stuffing 10-15 dry red chillies 1/4 cup urad dal 2 tbsp coriander seeds (dhaniya) 1 tbsp chana dal 1/2 tbsp methi seeds 1 tbsp mustard seeds 4 pinches hing (asafoetida) 2 tbsp oil
How to make the stuffing mix :
Heat oil in a pan. Add red chillies and fry for a minute. Add urad dal, chana dal and fry them till they start turning golden brown. Add coriander seeds and methi seeds fry till all of them turn to golden brown on medium flame. Add mustard seeds and hing at the end. Allow mustard seeds to crack. Remove from heat and grind in a blender into fine powder. After the powder cools down, shift into a tight container and store in a cool dry place.
The stuffing(powder) can be used with other vegetables like Tindora, Ridge gourd (beera kaya). Add more red chillies if you want it  more spicy. If the powder is too spicy for you, grind with fried peanuts/puffed chana dal before using it in a curry.

How to make Curry :

Add salt to 10 spoons of this powder and mix well. Wash brinjals and remove the stem. Make 2 perpendicular slits on bottom side and stuff it with sufficent powder. Heat oil in a deep pan. Add the stuffed Brinjals and fry for 5-10 mins on medium heat. Cover the pan with lid and keep turning the brinjals to avoid burning. Add 2 teaspoons of powder at the end and cook for a minute on low flame and remove from heat.
Serving : Serve with rice.

This week, it's only MOCO for you.  However, a bit more on MOCO !  That's just because, I am very sure that none in SRA knows about MOCO cartoons (That's a challenge, can anyone here correct me !

As you may see, MOCO is the name of the Cartoonist. Each strip  tells us a humourous story. The main character is a short ball headed man. The fatty lady is his wife.
Can anyone in SRA research and find out the name of this main character ?  Until that time let's call this "cute" man MOCO !





Week 20

First, let us make some Paayasam !
Ingredients for Semia (Vermicelli) Payasam

Vermicelli(Semiya) - 1 cup
Milk - 2 1/2 cups
Cardamom(Elakka) powder
Milkmaid - 1 tin
Ghee - 1 tsp
Rose essence - A little
Almonds(Badam) - 6 - 7 nos
Cashews - A few
Pistachios(Pista) - A few

How to make Semia (Vermicelli) Payasam
1)Roast the vermicelli in ghee, till it gets a light brown colour. 

2)Roast the cashews in ghee and keep aside.

3)Boil the milk and remove the cream (pada) from it.

4)Add 1/2 cup of water and cook the semiya in it. 

5)Add cardamom powder.

6)Keep stirring to prevent the formation of lumps. 

7)When the semiya is almost cooked, add the milkmaid and keep stirring for 2-3 minutes.

8)Remove from flame and add 5 - 10 drops of rose essence.

9)Garnish with badam, cashews and pistachios

And now, make your  Kanji  ya  Ganji 


Kanji is simple rice gruel ,  enjoyed by the poor and the rich  alike in Kerala. It is a  highly comforting food which is eaten as breakfast  or  dinner.
To make kanji, par-boiled or double-boiled rice is best, since it should be of a creamy consistency.  The broken double-boiled rice ( ‘podiyari ) kanji  is ideal as a ‘sick time’  food.

How to make Kanji : ( for 2 persons)
½ cup red double boiled rice (You can use any variety par-boiled rice)
½ cup whole green moong beans (cherupayar)
Cook it in minimal water until everything is of mushy consistency. You may cook it in a pressure cooker with 3 cups of water.
Don’t strain the water from the cooked rice, so make sure you don’t add too much water.
Serve hot only.

If you prefer simple kanji, don’t add payar.  


And now for a lip smacking chammanthi !

Ingredients for Onion Chammanthi


Grated coconut -  half of a medium sized one
Shallots ( Cheria ully) -   6/7/8 nos
Salt - As reqired to taste
Coconut Oil  -  2 tbsp
Red chillies ( Red vattal mulaku) - 5 nos

How to make Onion Chammanthi !

1) Cut shallots (cheria ully) in half.

2) Heat the oil in a pan or a kadai. 

3)  Add the shallots and salt for a short time.

4) When the colour of the shallots start changing to light brown, add the grated coconut and the chillies and  mix them well,  till the raw smell of coconut no longer comes.

5) Once the coconut also turns colour, switch off the flame.

6)  Grind this mixture along with salt and a little quantity of water in a mixer grinder. 

Ideal for Serving  with idlis or dosas  OR with kanji..

If water is less, the result will be a very dry chutney. So add water to make right paste. 
Ensure that water quantity is not high, otherwise, the chutney will be very watery.

If shallots are not available, it can be replaced with onions (savala). One large onion will be sufficient for one half of the coconut.

Udipi Sambar - A hot and spicy dal , best suited for idly or dosa.
Ingredients
Red gram(Thuvaraparippu) - 1/2 cup
Coconut oil - 2 tbsp
Groundnut oil - As reqd
Fenugreek seedss(Uluva) - 1/2 tsp
Black gram(Uzhunnuparippu) - 1 tbsp
Dried red chillies - 6 nos
Coriander seeds - 1 tbsp
Cumin seeds(Jeerakam) - 1/2 tbsp
Curry leaves - 1 sprig 
Coconut(grated) - 1/4 cup
Small onions(Kunjulli) - 25 nos
Green chillies - 2 nos
Mustard seeds - 1/2 tsp
Asafoetida(Kaayam) - 1/4 tsp
Tamarind(Puli) - 1 small lemon sized ball
Salt - 1 tsp
Jaggery - 1 tsp
(crumbled)

How to cook –
1)Cook the red gram till done and mash well. 

2)Heat 1 tbsp of oil in a heavy bottomed pan. 

3)Add the methi seeds and fry till light red. 

4)Add 1/2 tsp black gram and fry till it too is light red. 

5)Add the red chillies and coriander seeds and fry till well roasted. 

6)Add curry leaves and grated coconut and fry for a few minutes. 

7)When cool, grind in a mixer to a fine paste, adding a little water. 

8)Clean and peel the onions (keeping them whole). 

9)Heat 1 tbsp oil in a heavy bottomed pan. 

10)Add 1/2 tsp mustard seeds. 

11)When they splutter, add 1/2 tsp black gram and asafoetida and fry for a minute. 

12)Add sambhar onions, green chillies and curry leaves. 

13)Also add vegetables of your choice. 

14)Fry well till you get a nice aroma.

15)Add a little water, cover and cook till the vegetables are done.

16)Soak the tamarind in a little water and extract the pulp. 

17)Add it to the cooked vegetables. 

18)Bring it to a boil. 

19)Add salt and jaggery and cook till the raw smell of tamarind disappears. 

20)Add the mashed dal and the ground masala paste. 

21)Mix well, add a little water if required. 

22)Simmer Udipi Sambar (Udupi Sambar) for a couple of minutes. 

Serve Udipi Sambar (Udupi Sambar) hot with rice or dosa. 
May add vegetables like lady fingers, brinjals, pumpkin and drumsticks to the Udipi Sambar, for modified taste.

Now let's make some Coriander Chutney ... !


Coriander chutney or dhania chutney is a versatile chutney. You can eat it along with the food, use as a dip, mix in your vegetable juice or spread on a sandwich.
This recipe contains fresh coconut as well for giving an extra body to the chutney. If you happen to have lots and lots of fresh coriander, you can make this recipe without the coconut as well. Just don't use too much water to grind, otherwise the chutney will turn out watery.
Now, Ingredients for coriander chutney

* 2 big bunches of fresh coriander
* 1/4 fresh coconut (shredded or grated)
* Salt to taste
* 2 green chilies
* Little black salt
* 2-3 Tbsp of lime juice
* 1 Tsp sugar
* 1 Tsp roasted cumin seeds powder
* Little water
Method
Take the leaves and even the tender stalks of fresh coriander. Blend together with the rest of the ingredients. Use very little water to let all the ingredients come together. Sneak a taste. Make additions of salt or sugar if need be. Give it a quick zush again and tip it on to a serving bowl.

You have an empty wine bottle with its cork. Remove the cork, put a coin in the bottle. Then plug the bottle mouth with the cork.  Now, without pulling out the cork, or without breaking the bottle, how will you pull out the coin ?

Week # 14

Cooking  -  Tomato Chutney

Ingredients
* 2-3 Tbsp coconut oil
* 2 dry red chilies
* 1/2 Tsp mustard seeds
* 1/2 Tsp cumin seeds
* 1/2 Tsp onion seeds (kalonji)
* 1/4 Tsp fenugreek seeds (methi)
* 6 large red tomatoes (blanched, peeled and chopped)
* 1 Tsp sugar
* Salt to taste
Grind Together the following
* 1 inch piece of ginger
* 5-6 cloves garlic
* 2-3 dry red chilies
* 1 Tbsp dry roasted coriander seeds
* 1 Tsp dry roasted cumin seeds
* 1 Tsp dry roasted poppy seeds
* 2 Tbsp vinegar (malt vinegar or balsamic vinegar, if possible)
Method
Heat the oil in a kadai or any pan. Add the mustard seeds and allow to splutter. Next add the cumin, fenugreek and onion seeds, followed by the red chilies. Saute for a minute, then add the chopped tomatoes. Cook till the tomatoes are mashed and some oil is visible on the sides.
Add salt and the ground paste and sugar. Cook for another 5 minutes. Sneak a taste and make any adjustments. The delicious tomato chutney is ready to serve.
